Grilled Romaine Salad w/ Green Goddess Dressing

Grilled Romaine Salad

with green goddess dressing, grilled fresh corn, roasted red peppers, and fresh herbs

Ingredients

Green Goddess Dressing:

  • 1 cup parsley

  • 1 cup packed watercress or spinach leaves

  • 1/2 cup fresh basil

  • 1 avocado

  • 2 tablespoons tarragon leaves

  • 3 tablespoons minced chives

  • 2 garlic clove, roughly chopped

  • 2 anchovy fillets, optional

  • 1 lemon, juiced

  • 1 tablespoon apple cider vinegar

  • 1/2 cup organic EVOO

  • Kosher salt

  • freshly ground pepper

    Blend everything except olive oil in a food processor or blender until well combined, stream in olive oil and blend until thick and creamy. Store in the fridge for 2 weeks!

    Salad Ingredients

  • 3-4 heads of romaine lettuce, or 1 per person

  • 2-3 ears of fresh corn

  • 2 red bell peppers

  • 1/2 cup avocado oil

  • 1 avocado

  • 1/2 red onion, thinly sliced

  • salt + pepper

  • optional : feta or bleu cheese

Directions

  • Heat grill to medium high

  • Char the bell pepper on all sides until the skin is blistered, peel of the skin, and slice the flesh

  • Char the corn until nice and charred on the outside but still crunchy, slice off the cob

  • Brush the romaine heads with avocado oil and grill on each side until charred but still crunchy, 3 minutes per side

  • Dice avocado, red onion, and any other desired toppings

  • Dress and assemble the salad, enjoy!
