Grilled Romaine Salad w/ Green Goddess Dressing
Grilled Romaine Salad
with green goddess dressing, grilled fresh corn, roasted red peppers, and fresh herbs
Ingredients
Green Goddess Dressing:
1 cup parsley
1 cup packed watercress or spinach leaves
1/2 cup fresh basil
1 avocado
2 tablespoons tarragon leaves
3 tablespoons minced chives
2 garlic clove, roughly chopped
2 anchovy fillets, optional
1 lemon, juiced
1 tablespoon apple cider vinegar
1/2 cup organic EVOO
Kosher salt
freshly ground pepper
Blend everything except olive oil in a food processor or blender until well combined, stream in olive oil and blend until thick and creamy. Store in the fridge for 2 weeks!
Salad Ingredients
3-4 heads of romaine lettuce, or 1 per person
2-3 ears of fresh corn
2 red bell peppers
1/2 cup avocado oil
1 avocado
1/2 red onion, thinly sliced
salt + pepper
optional : feta or bleu cheese
Directions
Heat grill to medium high
Char the bell pepper on all sides until the skin is blistered, peel of the skin, and slice the flesh
Char the corn until nice and charred on the outside but still crunchy, slice off the cob
Brush the romaine heads with avocado oil and grill on each side until charred but still crunchy, 3 minutes per side
Dice avocado, red onion, and any other desired toppings
Dress and assemble the salad, enjoy!
